Saturday's Minestrone

I used this recipe as a template.  It's soup, so you basically chop a bunch of healthy stuff and throw it in a pot.  I cut the cooking time down to about an hour by:
  1. cooking the veggies on medium heat until they were soft instead of letting them slowly simmer
  2. simultaneously cooking the pasta in another pot
We had some fresh bread with the soup, but you could omit that if you chose.  I know there is pasta in the dish, but I figured we could ease into this brave new world with a few well-placed carbs.

Also to do while you're making tonight's dinner:
Peel and grate 1 - 2 c. of carrots
Peel and chop ~ 1/2 c. onion (small dice)
Clean and chop ~ 1.5 c. celery (small dice)
Peel and dice 1 or 2 zucchini (small dice)

This is for tomorrow night's lentils.  You'll have time to do this while your veggies cook.

New "Abetic" Endeavor

If mom, who has recently been diagnosed with diabetes, can raddishly...oops, I mean radically change her life to be healthier, so can I.  My family depends on me for their nutrition, and I can step up my game.  So I've decided to do at least one "abetic"-friendly meal a week and post my culinary efforts.  Here we go!
